1 lb. flounder
fillets
3 Tbs. butter
2 Tbs. water
2 Tbs. lemon
juice, freshly squeezed
¼ tsp. Salt
Freshly grated
pepper, to taste
2 Tbs. fresh
parsley, minced
Preheat oven to
450 degrees. Melt butter in shallow
baking dish in oven. Remove baking dish
from oven and add water, lemon juice, salt, and pepper. Arrange fish in baking dish; flip to coat
with butter mixture. Bake in oven 10
minutes per side, or until fish flakes easily with fork. Remove fish from pan. Stir parsley into butter mixture. Spoon mixture over fish to serve. 25 minutes preparation time. Makes 4 servings.
