1 lb. lentils
2 Tbs. butter
¼ cup carrots,
chopped
¼ cup onions,
chopped
¼ cup celery,
chopped
1 can diced
tomatoes
2 quarts organic
chicken broth
Salt, pepper,
thyme, and oregano to taste
Sauté onions, carrots,
and celery in butter 6 to 7 minutes. Add
the remaining ingredients and cook over stove 30-45 minutes or until
tender. 55 minutes preparation time. Makes 8 servings.
